Ingredients: 500 g courgettes, 4 tablespoons olive oil, salt, vinegar, 1 finely chopped garlic clove, fresh mint leaves
Cut the courgettes into thin slices and fry them until golden in very hot oil. Drain them well and season them with salt, garlic, mint and vinegar.
For a tastier version, leave the courgette slices to dry in the sun before frying them. Variation: Fry 1/2 sliced onion and add the courgettes without the garlic or mint.
